Chimichurri — a perfect sauce for grilled meats

Chimichurri is a sauce from Argentina. It is an herbed sauce, typically with parsley, garlic, olive oil, salt, pepper. It works well with roasted and grilled meats. In addition, it is quite good drizzled over grilled or roasted veggies. In Argentina, this sauce is usually on every table at all times.

  • 3/4 cup chopped flat leaf Italian parsley
  • 3 tablespoons chopped cilantro
  • 6 garlic cloves chopped
  • 1/3 cup red wine vinegar
  • 2 teaspoons of sea salt (or Kosher salt)
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon freshly ground pepper
  • 1/2 cup extra virgin olive oil


Whisk all ingredients in a bowl. Refrigerate up to four hours if desired and making ahead. Serve at room temperature.


I often like to throw the ingredients into a blender and make a very smooth creamy sauce. Try it both ways and see which one you prefer!
