The creators of the prized Birdsall House are busy these days preparing us for their next creation: Gleason’s. The new place will be located at 911 South Street, in Peekskill – - slated to open sometime in August. Clicking on the Gleason’s link will take you to their blog for status updates.
Gleason’s is named after American comedian, actor and singer, Jackie Gleason who lived in the area.
Chef March Walker has some interesting menu planning in the works. Dishes such as Spicy Watermelon Gazpacho and Octopus salumi. The overall focus will be artisan flatbread pizzas, soups and salads, and just as they do at Birdsall, they will do their best to source food locally.
They are creating an eight-line draught system including one nitro line. Their beers will focus on specific styles such as pilsner, IPA, pale ales, porters and hefeweizen. In addition, they are developing a ramped up wine and cocktail program as well including a good selection of bourbons and scotch.
